Flat Iron Square, a sports bar and food hall in London Bridge, were looking to understand customer behaviour, specifically what was driving customer food purchasing rates. I designed and led a customer research program to find out why.
Combining mystery shopping, customer intercept surveys and in-depth interviews, I uncovered the core customer segments and what was driving their decision-making. Then I designed a workshop to prioritise high-impact, easy-to-implement solutions.
I delivered customer segmentation, pen portraits, and a prioritised action plan targeting significant untapped revenue from customers already in the venue.
